Carmenere Envero

Grapes are harvested by hand in April when they have reached optimal maturity. The harvest is done very selectively in order to ensure only the best grapes from our 60 year old vines. In order to extract color and aromas, the must is interfused with its skin for three days at low temperatures. The must is then fermented for seven days in stainless steel tanks with selected yeasts at temperatures ranging from 28° to 30° C (82° to 86°F). The wine is then left to macerate for two additional weeks in order to extract its fruity characteristics. Afterwards, 60% of the wine is aged in American and French oak barrels and 40% in stainless steel tanks. The wine is then aged in oak for 10 to 12 months. Finally, the wine is cellared in bottles for six additional months before its launch on the market.

Rosé of Carménère

From 85% Carmenere and 15% Syrah, made by consultant wine guru Alvaro Espinoza. Hand harvested at a natural high acidity, and aged on the lees for 3 months. Apaltagua is producing one of the best Chilean Rose wines out there. This really reminds me of Provencal Roses' with the crisp refreshing dryness and wonderful array of light berry flavors.

Grial Carmenere

Carmenère Grial is among the very best Carmenères produced today and comes from 70 year-old, ungrafted vines. Extreme measures were taken in fruit selection which results in a rich, extracted and bold wine capable of many years of extended cellaring. The seductive flavors of blackberry, grilled peppers and dark, spicy cherry linger on the palate.

Reviews:

"Opaque ruby. Sexy aromas of cherry-cola, boysenberry and vanilla, with Indian spice overtones. Broad, palate-coating black and blue fruit flavors show a velvety texture and pick up energy with aeration. Emphatically modern carmenere with intense, oak-spiced fruit tones lingering on the penetrating finish. This wine would sit nicely in a flight of high-end Napa red wines." ~ 91, Vinous May 2012

"There’s high energy emitting from this jacked-up varietal. Fig, cocoa, moss, cola and blackened fruit aromas introduce a ripped palate of high-volume cherry, plum, berry, chocolate and hard spice flavors. Hard and aggressive before airing; 608 cases made; drink now through 2015." ~ 92, Wine Enthusiast February 2012
